Cur|cu|min [nlat. Curcuma xanthorrhiza = Gelbwurz (Bot.); ↑ -in (3)], das; -s: gelbroter Farbstoff, der als Lebensmittel- u. Kosmetikfarbstoff zugelassen ist. Mit C. getränktes Papier (Curcumapapier) dient als Indikatorpapier u. zum Borsäurenachweis.

Curcumin
 
[zu Curcuma gebildet] das, -s, Cụrcumagelb, aus den Wurzeln von Curcuma longa extrahierter gelber bis roter Naturfarbstoff, chemisch das Diferuloylmethan, CH2[CO — CH = CH — C6H3(OCH3)OH]2. Curcumin ist zur Lebensmittelfärbung geeignet und wurde früher auch zum Färben von Baumwolle, Seide, Papier und Holz verwendet. Da sich Curcumin bei Einwirkung von Alkalien und Borsäure verfärbt, wird es als Indikator verwendet, v. a. in Form von Curcumapapier, das sich z. B. mit Alkalien braunrot färbt.
